Corned beef and cabbage is a traditional meal enjoyed by many on St. Patrick’s Day. Cooking it in your slow cooker is a quick and easy way to prepare this recipe and it gives you more time to have fun with your family and friends.
Ingredients:
- 4 lb corned beef brisket with spice package
- 1 head of cabbage cut into wedges
- 4 large carrots, peeled and cut into coin-sized pieces
- 10 red potatoes, quartered
- 1 onion, peeled and sliced
- 6 ounces beer
- 4 cups water
Preparation:
Lay the vegetables, minus the cabbage, in the bottom of the slow cooker and cover with water. Place the corned beef on top of the vegetables and sprinkle with spice package ingredients. Add the beer. Cook on low heat for seven hours. Place the cabbage wedges around the corned beef and cook an additional hour or until cabbage is tender. Freshly baked Irish soda bread goes great with this meal.
